ZUKR Sugar-Free Vanilla Cupcakes with Chick-Themed Cheesecake Topping
Makes 12 cupcakes
Ingredients:
Cupcakes:
- 180g (1 1/2 cups) all-purpose flour
- 2 tsp (10g) baking powder
- 1/4 tsp (1g) salt
- 115g (1/2 cup) unsalted butter, softened
- 100g (1/2 cup) ZUKR erythritol, powdered
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 120ml (1/2 cup) plain yogurt
- 60ml (1/4 cup) milk
Cheesecake Topping:
- 225g (8 oz) cream cheese, softened
- 50g (1/4 cup) ZUKR erythritol, powdered
- 1 tsp (5ml) pure vanilla extract
- 120ml (1/2 cup) heavy whipping cream
- 3 drops yellow food colouring
Decoration:
- Dried mango slices
- Freeze-dried blackberries
Instructions:
- Preheat your oven to 180°C (350°F) and line a muffin tin with 12 cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and powdered ZUKR erythritol until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix in half of the dry ingredients, followed by the yogurt and milk. Finally, mix in the remaining dry ingredients until just combined. Do not over mix.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted in the centre comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- While the cupcakes cool, prepare the cheesecake topping. In a large bowl, beat the softened cream cheese with the powdered ZUKR erythritol and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Mix the yellow food colouring into the cheesecake topping until the desired shade is achieved.
- Once the cupcakes are completely cooled, use a piping bag fitted with a round tip to pipe a generous amount of yellow cheesecake topping onto each cupcake, creating a dome shape to resemble a chick.
- To make the chicks' beaks, cut small triangles from the dried mango slices and gently press them into the frosting of the cheesecake topping. For the eyes, place two freeze-dried blackberries on the front of the topping.
- Refrigerate the cupcakes for at least 1 hour before serving to allow the cheesecake topping to set.
