ZUKR Sugar-Free Strawberry Cupcakes

200g (1 and 3/4 cups) self-raising flour
200g (1 cup) ZUKR (ground to a powder in a blender or smoothie maker)
200g (7/8 cup) plant-based margarine or butter, softened 4 eggs (or equivalent egg substitute)
1 tsp vanilla extract
2 tbsp plain Greek yogurt


  • 300ml (1 and 1/4 cups) double cream
  • 100g (3/4 cup) soft cheese
  • 100g (1 cup) ZUKR (ground to a powder) - add more to taste if required
  • 100g (3/4 cup) fresh strawberries, sliced
  • 1 tbsp of freeze-dried strawberries
  • 1 tsp vanilla extract



  1. Preheat your oven to 180°C/350°F/Gas Mark 4.
  2. Line a 12-cup muffin tin with cupcake liners.
  3. In a large mixing bowl, cream together the margarine/butter and ZUKR until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Sift in the self-raising flour and gently fold the mixture together until just combined.
  6. Add Greek yogurt and fold gently to combine.
  7. Spoon the mixture into the lined muffin tin, filling each cup about 2/3 of the way full.
  8. Bake in the preheated oven for 18-20 minutes, or until the cupcakes are golden brown and a skewer inserted into the centre comes out clean.
  9. Leave the cupcakes to cool completely on a wire rack.
  10. To make the topping, whip the double cream and soft cheese until it forms stiff peaks. Fold in the powdered ZUKR and vanilla extract. Once the cupcakes are completely cool, spoon or pipe the cream topping onto each cupcake, decorate with sliced strawberries
  11. Add the freeze dried strawberry sprinkles over the top for extra gorgeousness!
